Black Olive's Father's Day Menu

Black Olive celebrates Father's Day with a special menu. The Black Olive Father's Day Specials will be available from June 13-20, 2014 only. As part of this promo, Dad will receive one bottle of Titje Beer for every item ordered from the menu. Here are six new dishes created by Chef Carlo Miguel and his team for the occasion:

First on the menu are two appetisers. The Sous Vide Duck Carpaccio with Mint & Orange Gremolata (P385.00) is a dish of thinly sliced duck meat slow-cooked to tender perfection, and is served on a bed of gremolata made of orange zest and grated mint. On the side is a salad consisting of mesclun greens, green apple slices and topped with marinated onion. The duck carpaccio has a very rich flavor that is toned down by the zesty minty flavor of the gremolata. The fresh salad adds a refreshing complement to the dish.

Beer Battered Bacallao Croquettes (P375.00) is an appetizer dish made of mashed potatoes mixed with bacallao, or dried salted cod, into a batter mixed with beer, and fried into crispy golden croquette balls. It is served with a side of salad of mesclun greens, marinated onions and dried tomatoes. The croquettes have a crispy crust and a soft inside with a light creamy flavor. It's an appetizer that not only Dad, but also Mom, will enjoy.

For the mains, we can start off with something light. The Spinach Ricotta Parmesan (P435.00) is a creamy pasta dish with its texture made rich by adding ricotta cheese and flavored using Parmesan cheese. Spinach is then added to give a light and refreshing herb flavor to the pasta dish.

Then there's the Barbeque Chorizo Pizza (P435.00) made with Chorizo Pamplona and ground pork. It has barbeque sauce as base and is topped with bell peppers and jalapeno peppers. It's a savory pizza that Dad will truly enjoy with his bottle of ice cold beer.

The Coq au Vin with Mushrooms, Confit of Challots and Rice Pilaf (P585.00) is a complete meal consisting of the traditional French dish coq au vin, chicken braised in wine with mushrooms, garlic, bacon and shallots confit, and served with rice pilaf. The chicken is tender and the sauce is savory. The half chicken and the generous serving of rice pilaf makes this dish good to be shared by two persons. If Dad has a big appetite, we're sure he will enjoy this dish, especially when paired with ice cold beer.

The Braised Lamb Shank with Pumpkin & Mint Risotto (P795.00) is definitely a treat for Dad on his special day. The lamb shank is braised for 3-4 hours until the meat is tender and would just fall off the bone. It is then placed on a bed of risotto mixed with pumpkin and slightly flavored with mint. This dish is also good for sharing.
