Polo Bistro: Resort Style Dining at Marco Polo Davao

Polo Bistro is a casual dining restaurant located at the iconic Marco Polo Davao. This dining outlet serves inter-continental a la carte dishes using the freshest and highest quality ingredients which Davao City is known for.

Located next to the hotel's open-air swimming pool, Polo Bistro offers a resort-style dining experience without leaving the city. During our most recent trip to Davao City, we were able to try some of the signature and best-selling dishes of Polo Bistro, served in a three-course meal format.

Fried Mozzarella Cheese Sticks with Marinara Sauce
For starters, we had the Fried Mozzarella Cheese Sticks with Marinara Sauce. I liked the contrast of the soft and chewy mozzarella cheese and the crunchy golden brown coating. The piquant and semi-sweet flavor of the marinara sauce comes form the freshest tomatoes which makes it a perfect match for the delicate flavor of the mozzarella.

Quinoa Salad with Smoked Salmon and Green Asparagus
Another starter served was the Quinoa Salad with Smoked Salmon and Green Asparagus. Corn is added to the cooked quinoa seeds to add color and flavor. It is then topped with alfalfa sprouts that add a sweet nutty flavor to the salad. On the side are servings of smoked salmon, green asparagus and kesong puti, a play of contrast in textures and flavors. Mesclun greens on a bed of sliced ripe mangoes gave a refreshing finish to the salad.

Grilled Tiger King Prawns
Three dishes form part of our main course, starting off with Grilled Tiger King Prawns. The prawns are very plump and tender. The sweet taste of the prawns means that the tiger king prawns were sourced locally in Davao and cooked on the same day they were caught.

Sirloin Steak
Next to be served was the Sirloin Steak. It is lightly spiced so that the luscious taste coming from its natural juices is only enhanced and not overpowered. It is perfectly grilled keeping it tender and moist.

Baby Back Ribs
Baby Back Ribs came next. The pork ribs were slow cooked in low heat to achieve that fall-off-the-bone texture. The ribs are beautifully plated topped with sweet ripe mangoes adding a vibrant color and tropical touch to this American dish. On the side is a serving of pomelo-mango salad which helps to cleanse the palate, preparing it for the next course.

We finally reached the last part of our three-course lunch: dessert! We got to sample two creative dessert offerings of Polo Bisto. The Pandan & Jackfruit Parfait in Bamboo Tubes is a light and creamy dessert with a subtle flavor of pandan and jackfruit playfully served in a container made of bamboo and topped with cream. Mangoesteen Moose is also a creamy and lightly sweet dessert with hints of the zesty flavor of mangoesteen. It is then topped with candied mangoesteen and chocolate.

Pomelo & Mango
Dining in Davao is not complete without finishing your meal with a platter of fresh fruits. And since you are in Davao, you should feast on some of the city's iconic fruits such as pomelo, mangosteen and durian. Polo Bistro made sure that they served the freshest and sweetest pomelo, mango and mangosteen.
