Last November, we celebrated the fourth year blog anniversary of pinasmuna.com and our milestone of visiting all 81 provinces of the Philippines after four years of travelling since 2010. There's no better place to celebrate these two special occasions than the country's top travel destination, Boracay.

To make the celebration even more special, Boracay's most sought-after luxury resort, Shangri-La's Boracay Resort and Spa, hosted a dinner for us at Sirena. We were welcomed by the resort's management at the lobby where we took a golf buggy that brought us to their cliff-top restaurant. Before heading to Sirena, we stopped by Solana, Shangri-La Boracay's open air cocktail bar. Our hosts and we had a few drinks and talked about our travels and adventures around the Philippines, while waiting for our dinner to be served at Sirena.

We were told that Solana is the resort's best spot to catch the sunset while lounging in one of their cabanas. The cabanas at Solana offer a stunning view of the resort's private beach and the crystal-blue waters of the sea. At sundown, it's a perfect place to enjoy the cool breeze from the sea over great drinks and conversations.

We finished our drinks just on time when our dinner was served at Sirena. The fine dining restaurant has a high ceiling with a huge cylinder drop light giving a warm feel to the well air-conditioned dining area. The interior is generously lined with wood with tables and chairs matching the overall theme of Sirena.

Our dinner started with Niçoise Salad (pronounced nee-swaz salad) served with freshly baked rolls and focaccia bread. The French salad (no photo) was topped with seared tuna and was perfectly flavored by the anchovies. It was a refreshing salad that is big enough for 2-3 persons.

Since it's a seafood restaurant, I ordered Mussels from their menu. Those huge mussels were steamed in premium white wine and topped with fresh herbs. They were so plump and juicy! You can actually tell from the taste and texture that the mussels were fresh. I ordered garlic rice which perfectly went well with the sweet mussels. The mussels were served in a sauce of mussels juices to which I also enjoyed soaking focaccia bread.

Edgar on the other hand does not eat seafood but Sirena gladly customized a meat dish for him. Getting a Tenderloin Steak with Carbonara Pasta, who would complain right? Look at how thick that tenderloin steak is. Edgar requested the steak to be well done. It had the perfect doneness that Edgar loves, but it was moist and tender. The pasta was al dente, perfect to the bite. The carbonara sauce had the right creaminess that is not tiring. The flavor of the bacon adds a mild savory taste to the dish.

For dessert, we had their best-selling Chocolate Sensation, a chocolate fondant pudding served with frozen yogurt on the side. The chocolate fondant had a deep dark chocolate crust with a gloriously delicious gooey center. It wasn't overly sweet, just the way we like it. The frozen yogurt gives a refreshing ending to this dessert. Like all the marvelous dinners we had, we ended our Sirena dinner with a cup of freshly brewed coffee.

It was indeed a splendid evening at Sirena. The food was excellent, the ambiance was lovely and the customer service was outstanding. It was definitely one of our best dining experiences ever. Thank you very much Shangri-La's Boracay Resort and Spa for being part of our blog's special day!
