Yee Sang (Yu Sheng in Mandarin) is a raw fish salad consisting of over 20 ingredients including salmon and shredded vegetables. Each ingredient represents blessings of abundance, success and prosperity. This is also called the Prosperity Toss salad wherein members of the family participate in the traditional tossing of the salad. The higher the salad is tossed in the air, the higher the increase in one's fortune.
