Bibingka-Inspired Desserts for Christmas



The Bibingka is one of the favorite snacks eaten by Filipinos during Christmas season and a lot of versions and variations of it already exists. Where to find the best tasting bibingka is highly debatable, but that is not what we are featuring in this article.

The Filipinos' love for bibingka has inspired many to create desserts with a twist of bibinka. This Christmas season, why not try some of these bibingka-inspired desserts. Here are some that we found in Metro Manila:

Bibingka Crème Brûlée

This traditional French dessert was given a Filipino twist by flavoring the custard base with salted duck eggs and quezo de bola, the key flavors of the bibingka. It is then topped with a layer of hard caramel to give it its distinctive creme brulee look.

The custard base is rather firm compared to its French version, but you can really taste the flavor of the bibingka. The hard caramel slightly pulls it away from the bibingka taste and closer to the creme brulee. But overall, it is an interesting

Bibingka Soufflé

Souffle is another classic French dessert made with a custard base mixed with other flavoring ingredients, and then topped with beaten egg whites which will form as the top of the soufflé. The base of this souffle includes coconut custard, salted duck eggs and quezo de bola. It is then topped with beaten egg whites and baked for 15 minutes.

We find the bibingka soufflé somewhat a cross between a brazo de mercedes and bibingka. The egg white topping formed a soft white meringue similar to the texture of the brazo de mercedes. The base custard gives this dessert the bibingka flavor. The extra serving of custard sauce adds more creaminess and sweetness to this soufflé. The Bibingka Soufflé is really interesting and definitely worth the try.

Bibingka Ice Cream

This ice cream is made with real bibingka with all its ingredients such as salted duck eggs, quezo de bola and grated coconut. It also has the characteristic flavor of roasted banana leaves. It felt weird eating this ice cream because we are used to bibingka being warm. As soon as the bibingka flavor becomes familiar to the taste, it becomes enjoyable.

Keso Flan

This is a cheesecake that looks like a leche flan, thus the name keso flan. In itself, it actually tastes like leche flan but the texture is that of a cheesecake. So, why is this included in this list? It is because when you combine the keso flan with slices of salted duck eggs and quezo de bola, it will taste like bibingka. Curious? You should be.
