Red Jade Restaurant at The Manila Hotel

Red Jade is the newly reopened Chinese restaurant of The Manila Hotel. It occupies the location of the Mabuhay Palace, the hotel's former Chinese restaurant which focused mainly on Cantonese Cuisine. The rebranding gave the restaurant a more Chinese identity, and with this new identity comes new dining experiences for its guests.

After being closed for a month, the restaurant reopened with very little modification on the design. But if you dined at the former Mabuhay Palace before, you will notice that the colors are more vibrant now, there are more reds, the lighting has improved, and furniture were refurbished. The private dining rooms were given a fresher and more elegant look the newly installed wallpapers.

Red Jade has also adopted the formal table setting practiced in fine dining restaurants in Hong Kong where-in each guest is provided with two sets of chopsticks and a spoon. The first set of chopsticks, usually placed near the dinner plate, is the personal chopstick. The second set of chopstick, usually more ornate in design and placed farther from the dinner plate, is the serving chopstick.



The serving chopstick shall only be used to pick food from the dishes and onto one's dinner plate, while the personal chopstick shall only be use to pick food from one's dinner plate and into one's mouth. This custom is considered more hygienic than having a communal serving chopstick per dish which is shared among all diners.



The Red Jade menu consists of both classic and modern Chinese cuisine with varieties ranging from Cantonese, Beijing, Shanghainese and Sichuan cuisines. Here are some of the dishes we tried at Red Jade during the private media lunch hosted by The Manila Hotel.
