A Preview of Madrid Fusion Manila 2015



SM Supermalls held a cuisine demonstration at Sarsa Kitchen + Bar, Mall of Asia, to give the media a preview of Madrid Fusion Manila 2015. We were one of the bloggers invited to witness the event participated by Chef Bruce Ricketts, Chef Rob Pengson, Chef Claude Tayag, and Chef JP Anglo who showcased their culinary mastery.

Madrid Fusion Manila 2015 is happening on April 24-26 at the SMX Convention Center in Pasay City. It showcases the Philippines as an haute cuisine destination in Asia through festive activities taking place in SM Supermalls in the country.



Highlight of that afternoon were the Filipino dishes prepared by the chefs for the guests to try. Chef Claude Tayag highlighted the diversity of Filipino cuisine by cooking two versions of adobo: the Adobo ni Juan Tamad and the Adobong Puti. Chef JP Anglo demonstrated his creativity with his Bangus Spring Rolls with Talangka Vinegar and Batikulon Mang Tomas Sauce.

Chef Bruce Ricketts made use of the abundant local Filipino produce in his Seared Prawns with Marinated Saba, Avocado and Burnt Coconut Vinegar. Finally, Chef Rob Pengson tickled the Filipino sweet tooth with his Mango Tapioca Surprise.


Sarsa Kitchen + Bar, owned by Chef JP Anglo and venue of that afternoon's event also showcased some of its Ilonggo delicacies to the guests, including (clockwise from top left) the Inasal Tofu, Lechon Manok Lumpia, Isaw (Chicken Intestine), and the Panit (Chicken Skin).
