Chef Bruce Lim Brings the Unique Flavors of Filipino Cuisine to Seven Corners Restaurant



Seven Corners Restaurant, the premier buffet restaurant of Crowne Plaza Manila Galleria in Ortigas Center, partnered with Chef Bruce Lim to bring the unique flavors of Filipino cuisine to diners this August 16-31, 2015.



During a press preview held last week at the hotel, Chef Bruce demonstrated his mastery of preparing an innovative fusion of Filipino dishes that will bring fresh and unique Filipino dining experience to the patrons of Seven Corners.



During the cooking demo, Crowne Plaza Manila Galleria's very own Executive Chef Angelo Faoro joined Chef Bruce Lim in preparing this sumptuous Steamed Mussels with Chorizo. The two culinary masters made it look like cooking as easy as ABC, but we all know that cooking is an art that only chefs like Chef Bruce and Chef Angelo can execute perfectly.

Steamed Mussels with Chorizo
The room was starting to be filled by the fragrant aroma of this heavenly seafood dish, that everyone started to get hungry signaling the banquet team to serve the 5-course lunch especially prepared by Chef Bruce for the attendees of the event. It was a sort of a preview of what to expect at the buffet.

Tuna and Salmon Tartare
For appetizer, we had the Tuna and Salmon Tartare. Chef Bruce shared that the sushi-grade tuna and salmon were sourced from General Santos City and were actually flown in that morning. It was that fresh! Calamansi was used to marinade the fish.

Batchoy
To warm up our tummy, Batchoy was then served. It was perfect for that rainy day. Chef Bruce Lim's version was very interesting because of the condiment served on the side. The dark paste is actually made of soy sauce, bagoong (shrimp paste), chopped green onion, and lots of toasted garlic. Adding in moderation to the soup, it intensified the nostalgic savory goodness of the Batchoy which reminded us of our trips to Iloilo. Adding guilty pleasures to the soup was the chicharon. As Chef Bruce puts it into words, anything with chicharon is good.

Paco Salad with Pineapple Vinaigrette
This was a simple salad consisting of paco (fiddle fern), mangoes, steamed kabute (local mushroom), pickled scallions, bits of kesong puti (local white cheese), and drizzled with pineapple vinaigrette. A truly Filpino salad. I told Chef Bruce that I would want it with water chestnut. He said, singkamas (jicama) would be a more Filpino substitute. To add color and crunch, I would add cubed watermellons as well.

Calamansi and Garlic Rubbed Striploin Steak & Tanglad Chicken
For the main course, our plate consisted of roasted striploin rubbed with calamansi and garlic and served with baby potatoes and buttered carrots and French string beans, as well as tanglad (lemmongrass) chicken with malunggay chimichuri.

Buko Pie Shooters
For dessert, we had Buko Pie Shooters, another interesting creation of Chef Bruce. It had the consistency of maja blanca, flavored with coconut and made extra rich with muscovado sugar syrup. At the bottom of the shooter are ground pastry crust that serves as the crust of this buko pie in a glass.

Lambada
Chef Bruce also had us try one of the cocktails prepared by his team. It is called Lambada getting its name from Lambanog, a local alcoholic drink made of fermented sap of coconut flower. It's blue color is probably from blue curacao and at the bottom is a layer of grenadine. Chef Bruce described it as a local version of pinacolada.
